| Lunch Box 623: Applet |
[Jan. 20th, 2009|10:41 pm] |
My whole office spent lunchtime in the conference room, watching the inauguration. And In that spirit I present an all-American bento: meatloaf, baked Japanese sweet potato, steamed snow peas, strawberries, persimmon, and a yates apple.
Check out that little bitty apple! It's only about an inch and a half high by about 2.5 inches in diameter. I suppose it says something about me that the first thing I thought when I saw these was "chibi apples!"

| Lunch Box 613: Thanksgiving's over |
[Dec. 11th, 2008|09:02 pm] |
| [ | Tags | | | apple, box, fruit salad, light-fried plantain chips, meatloaf, orange, persimmon, pink orange, plantain, pomegranate, steamed broccoli | ] |
Enough with the turkey! Being a single person with a half a leftover turkey is not a bad situation at all if you like turkey - which I do - but by the time I've gnawed it to the bone I'm quite happy to move on to something else - in this case, good old-fashioned meatloaf slathered with ketchup. It may look weird and gray in this picture, but, trust me, the deficiency is in my photography skills rather than my cooking.
With it I have some very crisp steamed broccoli, light-fried plantains; and a fruit salad made with apple, pink orange, pomegranate, and persimmon. It's like a mini-Thanksgiving feast, but without turkey!

| Lunch Box 605: Meatcupcakes |
[Nov. 19th, 2008|08:18 pm] |
Why have I never made mealoaf cupcakes with silicone cupcake cups before? Besides not having any silicone cups, that is? They are the perfect way to make little bento-able protein packages. These ones have ketchup "frosting," of course. For trivia's sake, the recipe I used, which is on my site, makes an even dozen meatcakes.
I also have the usual: steamed broccoli, baked Japanese sweet potato, and rice, plus carrot & raisin salad made with golden raisins. While making these I accidentally opened a cup of plain yogurt instead of vanilla, which meant that I have some leftover plain yogurt to use up, and the only recipe I know that uses plain yogurt is naan, so I guess I'm obligated to make some flatbread in the very near future.

| Lunch Box 588: Chibi meatloaf |
[Sep. 26th, 2008|10:10 pm] |
Who says meatloaf can't be cute? I had a little filling left over after making meatloaf gyoza, so I got out a muffin pan and made a few mealoaf cupcakes. Come to think of it, individual meatloaf cakes are better suited for bento lunches than slices of regular meatloaf, aren't they?
And then I have steamed broccoli, baked sweet potato, blue country cornbread, and an pan. Nom nom.

| Lunch Box 573: Poutine on the ritz |
[Jun. 25th, 2008|08:37 pm] |
A friend of mine has been lusting after poutine. His blog has chronicled his ever-thwarted attempts to consume this substance. He got me curious, and when I discovered it was close to the gravy fries I used to love years ago, I decided I wanted some too. So I found out how to make it. In fact, that recipe is a two-fer, because to make poutine I had to learn how to make farmer cheese.
So - here we have meatloaf, poutine, edamame, cherries, and persimmon. I feel Canadian all over!

| Lunch Box 572: In memory of George Carlin |
[Jun. 24th, 2008|10:37 pm] |
By now everyone in the continental US knows that George Carlin passed on this past weekend. What can I say, he was a funny man and the news made me sad. So, here I am, making a bento lunch that is a salute to him, sorta-kinda. It includes meatcake, AKA meatloaf, and blue country cornbread, which is classic blue food. Blue food, man.
There's also steamed sugar snap peas, some mushroom turnovers I bought at Trader Joe's, and cherries, but I can't tie those in to Carlin because they weren't going bad in the back of my fridge.
Tomorrow: The seven foods you can never use in a bento!

| Lunch Box 551: All-natural blue |
[May. 7th, 2008|12:19 pm] |
Last year I went on a blue-food-making jag. Nearly all of said blue foods involved food coloring. Well, here's some more blue for ya, and this time the color is all-natural: blue country cornbread. It's just like regular cornbread, but the cornmeal was made from blue corn. The regular cornbread recipe, by the way, comes to us courtesy of my coworker Maria. (The cornbread really is light blue; they gray look comes courtesy of my weird kitchen lighting and lack of photography skillz.)
Then there's meatloaf, which is actually more like meat & vegetable loaf, as by volume it's half grated-up carrot & zucchini & mushroom. Maybe I should call it a V-8 Loaf. And there's steamed breadfruit and steamed kabocha, both pre-dipped in melted lemon butter, and fresh longans

| Lunch Box 536: Purple meat? |
[Apr. 4th, 2008|07:16 pm] |
No, I didn't color my meatloaf purple, or whatever color you see in that photo. For some reason my kitchen lighting takes good-looking meatloaf and makes it look zombie-ish. Complete with ketchup "blood," but I am responsible for that part.
Then there's a veritable forest of steamed broccoli, some carrot & raisin salad, some icky-looking tamarinds, and a fruit salad made with orange, pineapple, and coconut gel.
One thing I like about this bento box is that I can separate my lunch into hot and cold halves. Put what I want to heat in one half and the cold stuff in the other. Handy, that.

| Lunch Box 533: Loafing but not lazy |
[Mar. 31st, 2008|07:09 pm] |
All right. After consulting with my mother, who is a highly respected professional (flutist), I have baked a meatloaf that is... you know how good meatloaf can be really good? Yeah. Like that. Who knew that toast in the bottom of the loaf pan before baking would soak up the grease? (The toast peels off easily afterward.) I can't get a recipe out of my mother because she doesn't use 'em, but I can get some good advice! (Note: I meant my mother doesn't use a recipe. I do, and it's posted on my site if you want it.)
So! Here we have meatloaf, which looks a lot better in person than in this photo, no thanks to my bad kitchen lighting, baked Japanese sweet potato, steamed broccoli, and red grapes. The little red container is full of ketchup for the meatloaf. I like mine nice and ketchuppy.

| Lunch Box 529: Meatloaf is an adjective |
[Mar. 21st, 2008|08:37 pm] |
New food I learn to make! Meatloaf! Yeah, laugh it up, fuzzball, but I've never made meatloaf before. Good meatloaf is gooood. What I made on my first try, and of which you see a cupcake-sized serving in this picture, is good, but my Mom gave me some suggestions to make it better, so I'm going to hold off on posting an official recipe until I try her ideas.
(But if you really want a quick recipe, here's what I did: take a pound of lean ground beef, an egg, half a cup of breadcrumbs, a teaspoon of salt, a teaspoon of rolled sage, and a couple tablespoons of tomato paste. Dice up half an onion real fine. Chop up a few inches of broccoli stalk equally fine. Mix it all together. Put it in a loaf pan, making it about 2 inches deep. Cover it all with tomato sauce or ketchup. Bake at 350 for 45 minutes. Serve with more ketchup.)
And then there's more stuff: steamed broccoli and baked Purple Peruvian potato, which I'm not sure is actually Peruvian but it sure is purple; some mango; a giant mutant strawberry that I couldn't bear to cut up; and some tamarinds, which are good for freaking out my coworkers.
